I never knew that - I looked it up and it seems a versatile edible plant. I would need an awful lot of custard though. Also found out that Himalayan Balsam - which grows in all the places that the knotweed hasn't taken over is edible too. The seeds taste like nuts and the shoots make a good curry...allegedly.Stewed, it's like Rhubarb !!! Just add custard.
